Welcome to the fantastic vegan pancake world where some normal size pancakes transform to mini pancakes to be eaten as if they were cereals. A really nice idea to change a simple recipe and give it an original twist. They’re perfect for a special occasion or a simply funny and different weekend breakfast.
These mini vegan pancakes have a fluffy texture and the best comes when you know you can combine them with savoury and sweet, as you like best! In my case I combine them with sweet, since I’m going to eat them as cereals, but if you prefer to make them big they’ll be as good with savoury toppings.

VEGAN CEREAL PANCAKES
3 cereal type helpings or 6 big pancakes
· Ingredients ·
Pancakes:
120 g flour
1 tbsp baking powder
1 tbsp coconut sugar
a pinch of salt
120 ml almond milk
2 tbsp melted coconut oil
1 tsp vanilla essence
Toppings:
Agave syrup
Shaved dark chocolate
Strawberries
Almond milk
· Step by step ·
In a big bowl sift the flour with the baking powder.
Add the sugar and salt mixing everything well.
Add the almond milk, coconut oil and vanilla in two times, mixing well every time with a whisk so it doesn’t form lumps.
Heat a non-stick pan and with the help of a teaspoon gently put the pancake butter like little dots leaving some space between them, so you can flip them later.
Cook your mini pancakes from 30 to 45 seconds at minimum heat, they are so small that can get easily burnt.
Place them in a bowl as cereals with some almond milk, shared dark chocolate, agave syrup and strawberries.
· Tips ·
If you don’t have almond milk you can substitute it for another vegetable drink you have like oat or rice milk.
The measure of these mini pancakes is 0,5 cm to 1 cm diameter, but you can make them bigger if you’re not so patient. You can even make them normal size and you’ll have 6 big pancakes.
Change the toppings to your taste or whatever you use to have at home, play with your imagination!
