These vegan waffles are tender and very easy to make. If you have a sudden craving, in a short time you can have a perfect breakfast that you can combine with sweet or savory, depending on the indulgence you want to give yourself.
The touch of vanilla gives them an immediate aroma when they come out of the waffle iron, which makes them irresistible. This time I have combined them with pomegranate, baked apple with a touch of cinnamon, maple syrup, and some vegan coconut yogurt, but you can feel like Ferran Adrià and experiment with whatever you feel like or have on hand.
What is a flax egg?
A flax egg is the name used for the mixture of ground flax with water and is used to replace the chicken egg in vegan recipes, hence the name “flax egg”. Its purpose is to bind the ingredients and give moisture to the mixture.
The proportions to substitute a chicken egg are usually: 1 tablespoon of ground flax (7g) + 2.5 tablespoons of water (37ml). This substitution only works in simple recipes where the batter is not required to rise much, such as these waffles or also basic biscuits like a vegan banana cake. Since flax seeds do not have much fat, the flax egg requires that it be combined with other fatty ingredients, such as olive oil in this recipe, to compensate for the amount of original fats in the chicken egg.
In other more complex recipes, where the chicken egg protein creates a lot of texture to encapsulate the air, such as a meringue, it is not recommended to use this flax egg substitution but rather aquafaba.
Substitutions
Can I substitute coconut sugar?
Yes, with white or brown cane sugar. In this case, the proportions do not change, they would be 1:1.
Can I substitute the oat drink?
Yes, with any other vegetable drink. The choice will depend on your personal taste, if you like it sweeter, the rice drink without added sugars is usually sweeter than the soy drink for example.
Can I substitute wheat flour for another gluten-free flour?
Yes, but you must take into account that the dough will then be more compact and a little dry due to the lack of gluten, which in this recipe helps to develop a somewhat airy structure keeping the moisture.
If I want to combine them with savory instead of sweet, is the recipe the same?
In case the craving of the day calls for salty, what you can do is simply eliminate the vanilla extract from the recipe.

These vegan waffles, with a touch of vanilla that makes them irresistible, are tender and very easy to make in a short time. In addition, they can be combined with sweet or savory, depending on your whim of the day.
Ingredients
waffles
- 1 flax egg (1 tbsp ground flax + 2.5 tbsp water)
- 175 ml unsweetened oat drink
- ½ tablespoon apple cider vinegar
- 100 g wheat flour
- 1 tbsp baking powder
- 1 tbsp coconut sugar
- ½ tsp salt
- 1 tbsp olive oil
- 1 tbsp vanilla extract
you can combine it with
- pomegranate
- baked apple with cinnamon
- maple syrup
- vegan coconut yogurt
Instructions
- Mix the ground flax with the water and let stand for 5 minutes, you will see that it thickens.
- Combine the vegetable drink with the vinegar.
- In a medium bowl mix the flour, baking powder, sugar, and salt.
- To this mixture, add the previously mixed vegetable drink, the hydrated ground flax, the olive oil, and the vanilla extract. Mix the ingredients well until they are well combined.
- Preheat your waffle iron according to the instructions and with a kitchen brush put a little bit of coconut oil to prevent the waffles from sticking.
- Cook them for about 5 minutes, this will vary depending on the power of your waffle iron.
- Serve them with sweet or savory, in this case, I used pomegranate, baked apple with cinnamon, maple syrup, and vegan coconut yogurt.
Notes
- Don't overwork the dough, otherwise, you will develop too much gluten and you will end up with waffles that are a little harder than desired.
- These waffles keep well for 3 to 4 days in an airtight container in a dry place.
