I join the banana bread tsunami, that right now during the quarantine invades the whole internet, to offer you my version of the best banana bread with little chunks of dark chocolate from the entire universe, at least for me it is : )
This recipe, like all well executed banana breads, needs the bananas to be very ripe so that their flavor is accentuated as well as their sweetness. I’m going to give you a little tip to ripen them at home without having to wait for days. You just simply need to peel and cut your bananas and put them in a plate inside the microwave, now heat them 1 minute and then 1 more minute until they are as much ripe as you want. Easy and quick as that, to this kind of recipes where you are going to mash and bake the fruit, doesn’t matter if they didn’t ripe in a natural way during days.

THE BEST CHOCOLATE CHUNK BANANA BREAD
8 to 19 servings
· Ingredients ·
350g ripe mashed bananas (1 and a half approx.)
80g panela
100g unsalted butter, melted
2 large eggs
1 tsp vanilla extract
130g crême fraîche
180g plain flour
1 tsp bicarbonate of soda
a pinch of salt
100g chopped dark chocolate
50d chopped dark chocolate, for the top
· Step by step ·
Pre-heat the oven at 160ºC and prepare a rectangular baking tin, from about 22cm x 12cm approximately, with baking paper.
In a big bowl, with the help of a whisker, beat the melted butter with the panela until obtaining a paste.
Add the bananas, eggs, crême fraîche, vanilla and mix everything until it is homogeneous.
With the help of a big strainer sift the flour and add the bicarbonate of soda with the salt.
Now, mix 100g of chopped dark chocolate inside the cake batter stirring just few times.
Put the batter inside the cake tin, already prepared, and add on the top the remain 50g of chopped dark chocolate.
Bake it at 160ºC from an 1h to an 1h and 10 minutes, depends on your oven. The cake will be perfect once you insert a toothpick right in the middle and it comes out with a few moist crumbs.
Take it out of the oven and let it cool completely to unmould.
· Tips ·
It is very important you measure your mashed bananas, this fruit is so moist and if you add more the final result will be an uncooked cake in the middle.
For an intense banana flavour make sure you ripen your bananas with the little trick I explained you above in this post.
You can put another type of chocolate, like milk chocolate if you prefer it.
Also, you can add a handful of dry fruit such as hazelnuts or walnuts if you Fancy.
