Iām about to let you know how to bake one of the bests chocolate cakes ever, and yes, it is made with Guinness. I have to confess that Iām not a big fan of dessert filled with alcohol, like those little chocolates filled with liquid alcohol, but this cake is different and it has stolen my heart with its own super spongy texture. In this case, is not like you are drinking a beer straight away, trust me.
We could define this cake as spongy and soft with a delicate mascarpone frosting and a delicious salted caramel sauce, I already told you how much I love it in cakes ⦠so the combination of these three recipes plus the simple decoration with dark chocolate and cacao nibs makes this cake so popular between my latest orders.

CHOCOLATE GUINNESS CAKE WITH SALTED CARAMEL
makes 10 to 12 servings
Ā· Ingredients Ā·Ā
Cakes (makes 3 cakes of 15 cm diameter)Ā
240mlĀ Guinness beer
140g non-salted butter
90g pure powder cacao
340g sugar
180gĀ Greek yogurt
2 eggs L
1 tsp vanilla extract
250g flour
2+1/2 tsp baking soda
Pinch of salt
Mascarpone frostingĀ
115g cream cheese, room temperature
115g mascarpone, room temperature
1 tspĀ vanillaĀ extract
45g icing sugar
180ml whipping cream
Salted caramel
15g butter
65g sugar
65ml whipping cream
1 tsp of sea salt
DecorationĀ
Cacao nibs
70% dark chocolate
Ā· Step by step Ā·Ā
CakesĀ
Preheat the oven to 180ĀŗC and prepare three moulds of 15cm diameter with parchment paper.
In a saucepan melt the butter with the beer over low heat.
Add the cocoa powder, sugar and whisk until itās combined, then remove from the heat.
In a big bowl, and the help of aĀ whisker beat the eggs and vanilla extract with the Greek yogurt.
Add in the butter mixture and whisk.
Pour the sifted flour and baking soda and mix until everything is well combined.
Pour the batter into the prepared moulds and bake them at 180ĀŗC for 35min.
Leave them to cool for 10 minutes and then remove them all from the moulds, then place them on a cooling rack.
Mascarpone frostingĀ
In a big bowl whisk with an electric whisker both kinds of cheese until they are creamy.
Add the vanilla extract with the shifted icing sugar.
Add bit by bit the whipping cream and whisk until you see the perfect consistency youāre looking for.
Salted caramelĀ Ā
In a saucepan pour bit by bit a little amount of sugar up to low-medium heat until everything is dissolved.
At the same time pour the heavy cream into a saucepan and bring it to a boil.
When the heavy cream is ready then pour it into the dissolved caramel and add the butter moving the mixture quickly until everything is homogeneous.
Remove it from the heat and add the salt to the taste.
Leave the sauce to cool completely before using it.
Ā· Assembly Ā·Ā
Take off the top part of the three cakes with a cake cutter or a big knife.
Place the presentation plate, on the turntable for cakes, perfectly in the middle.
Start to assemble the cake in this order: cake + frosting + caramel. Keep doing that with the three layers of your cake.
When all the layers are ready, then cover with a thin layer of frosting all the cake. Leave it inside the fridge for 30 minutes minimum,Ā doing this youāll stop the crumbs from falling apart when you finally cover the cake, so itāll look neat. Next, cover all the cake with more frosting to finally decorate it.
With a small spoon drip the salted caramel sauce from the top to the bottom as you like.
Place the remaining frosting inside a pipping back with a big round nozzle and decorate the cake.
Finally, decorating the cake with some cacao nibs is so easy to stick with the help of your fingers. You can also place some dark chocolate on the top of your cake.
Ā· Tips Ā·Ā
If you canāt find Guinness beer then use another black beer you like with a toasted or caramelized flavour, so you can give to the cake an interesting flavour.
