Gluten free chocolate and pear cake
Chocolate pear cake is a great option for those who are looking for a decadent, but gluten-free dessert. This recipe combines a perfect blend of chocolate and pear, with a fluffy texture inside, creating a balance of flavours that will delight all your senses and suit your intolerant stomach. Wonderful.
Ingredients
Cake
- 100g dark chocolate
- 150g butter, unsalted
- 100g sugar
- 120g gluten-free flour mix
- 120g ground almonds
- 1+½ tsp baking powder
- 1 pinch of salt
- 3 L eggs
- 3 ripe pears, peeled
- a handful of almonds, sliced
Decoration
- 100g milk chocolate, melted
Instructions
- Preheat the oven to 180ºC and prepare a large rectangular cake tin with baking paper.
- Melt the dark chocolate together with the butter, over medium heat at bain-marie, and set aside in a bowl for later.
- In a large bowl, mix the sugar, the gluten-free flour mix, the ground almonds, the baking powder and a pinch of salt.
- Add the eggs and the melted chocolate and butter, already prepared earlier. The mixture will be thick and consistent, pour it into the prepared baking tin with baking paper.
- Peel the ripe pears and place them on top of the mixture, pressing them until they touch the base of the mould.
- Decorate with a handful of sliced almonds on top of the cake.
- Bake for 55 minutes at 180ºC, with heat from below.
- Remove from the oven and unmould the cake, allowing it to cool completely on a baking rack.
- Decorate the pear cake with the melted milk chocolate on top.
Notes
- Can be kept at room temperature for about 4 days in an airtight container, out of the sun and away from humidity.
