The texture is compact, crunchy yet sticky. Iām already mouth watering just thinking about the perfect combination with tea or coffee, depending on the time of the day you decide to devour them.
What are flapjacks? I wondered that myself, so I’ve come to resolve this existential doubt of many in this post.
The British were responsible ones, they were the creators of this delicacy back in the 17th century, when it was prepared as cheap, easy to bake and very energetic sweet for farmers.
The original recipe was cooked in an iron frying pan, but over time it evolved and began to be baked in the oven. It was also originally made with honey, but in my version you will see it with maple syrup.
Flapjacks are quite famous in English coffee shops, in Spain I have seen some that offer them as well, but it is not as common as in their country of origin. That said, if you want to try making a new sweet snack, which apart from being delicious is super easy to make, go for it! With this recipe success is guaranteed.
I like to make them for when I go hiking in the mountains, as a dessert when I eat at work or simply as a gift for family and friends, wrapped in little rustic packages, they look great.

Can I substitute coconut sugar?
Yes, you can use white or brown cane sugar, and the quantities would be the same.
Can I use honey, instead of maple syrup, as in the original recipe?
Yes, but personally I would not heat honey above 40ĀŗC, as it loses its properties and can be toxic for the organism in large quantities.
I don’t like raisins, can I remove them from the recipe?
Yes, you can remove this ingredient, and if you feel like adding another ingredient such as cranberries.

Ingredients
FLAPJACKS
- 150g butter, unsalted
- 100g coconut sugar
- 3 tbsp maple syrup
- 2 tbsp condensed milk
- 250g oat flakes
- 50g coconut flakes
- 50g raisins
- 70g walnuts, chopped
DECORATION
- 50g dark chocolate, melted
- 50g Lotus spread
Instructions
- Preheat the oven to 150°C, with heat from above and below, and line a baking tray with baking parchment.
- In a large saucepan over medium-low heat, melt the butter with the coconut sugar, maple syrup and condensed milk for a few minutes, until the sugar is completely dissolved.
- Remove from the heat and add the rolled oats, flaked coconut, sultanas, chopped walnuts and mix well.
- Put the mixture into the previously prepared mould and press down a little on the top. This way, when you cut it into portions, it will not crumble into crumbs and will be more compact.
- Bake for 40 minutes, with heat from above and below.
- Remove from the oven and let it cool completely.
- Add the melted dark chocolate on top with the Lotus spread, cut the flapjacks into rectangular bars or whatever you like that day ;)
Notes
- You can keep the flapjacks, in an airtight container in a dry place, for up to a week without any problem.
